If, like me, you are ready to bring on the fall just a little bit early, allow me to humbly suggest you add these delicious pumpkin pancakes to your menu planning. In just a few minutes, you could be enjoying this delightful breakfast, without even having to venture outside to your favorite pancake house.
Bring On Fall Vibes With Delicious Pumpkin Pancakes

Cook time: 10 minutes
Total time: 20 minutes
Ingredients:
– 1 cup all-purpose flour
– 1/2 cup pumpkin puree
– 1 tsp baking powder
– 1/2 tsp baking soda
– 1/2 tsp ground cinnamon
– 1/4 tsp ground nutmeg
– 1/2 cup milk
– 1/4 cup brown sugar
– 1 large egg
– 2 tbsp melted butter
– Cooking spray for frying
Topping:
– Maple syrup
– Whipped cream
– Chopped walnuts
Instructions:
1. In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and sugar.
2. In another bowl, mix together the pumpkin puree, milk, egg, and melted butter until well combined.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
5. Using a cookie scoop or small ladle, pour small amounts of batter onto the skillet to form 3–4-inch diameter pancakes.
6. Cook for 2-3 minutes on each side, or until golden brown and cooked through. [Hint: Seeing a lot of air bubbles helps to indicate doneness].
7. Serve the pumpkin pancakes warm with maple syrup, whipped cream, and a sprinkle of chopped walnuts for added deliciousness.

There is a lovely pancake chain where I enjoy eating when I am in the Smoky Mountains called Flapjacks. However, I live 3.5 hours from the area so it’s not feasible to run over there for a quick weekend breakfast.
