Hearty Broccoli Cheddar Soup
In the autumn and in winter, I really love cozy, simple, one pot recipes, that warm the soul. I love to spend these months snuggled up on the couch with my dog, reading a good book or binge watching my favorite shows. Like everyone else, I want tasty, satisfying food, but I don’t want to spend all day preparing it. Enter this easy, hearty Broccoli Cheddar Soup recipe. It’s so filling and tasty, perfect for those chilly fall days.
Hearty Broccoli Cheddar Soup

Serves: 3
Ingredients:
– 1 head of broccoli, chopped
– 1 carrot, grated
– 1 cup heavy cream
– 2 tablespoons butter
– 2 cloves garlic, minced
– Salt and pepper to taste
– 1 cup shredded Cheddar Cheese
– 2 ½ cups Vegetable or Chicken Broth
– 1 potato (diced)
Instructions:
1. In a large pot, melt the butter over medium heat. Add the minced garlic and sauté for a few minutes until fragrant.
2. Pour in the heavy cream and bring to a simmer.
3. Add the vegetable or chicken broth and bring to a simmer.
4. Add the chopped broccoli, diced potato and grated carrot to the pot. Cook for about 25-30 minutes, or until the broccoli is tender.
5. Stir in the shredded Cheddar Cheese until melted and well combined.
7. Season with salt and pepper to taste.
8. Serve hot, in a bread bowl, garnished with extra shredded cheese if desired. Enjoy your delicious Broccoli Cheddar Soup!
